Protein Pancakes | Recipe of the month

These protein-packed pancakes are an easy way to have a plentiful breakfast using ingredients that can be found in your cabinet.

This twist on the classic pancake has texture, added sweetness and negates the need for added sugar. Read on for how to put together these thick and chewy, cinnamon, banana, oaty and fruity, protein pancakes. 

Chia seeds are a great vegan alternative to eggs to perform as the binding ingredient. They also have too many health benefits to count. Your body loves variety, we thought chia seeds would be great to have here so you can save your yummy eggs for meals where you can actually taste them!

 

Ingredients

  • banana
  • 75g oats
  • chia seeds 
  • 2 tbsp milk (dairy, soya, oat or nut milks all work)
  • pinch of cinnamon and salt
  • 2 tbsp protein powder (whey, pea or whatever your preference)
  • coconut oil, or a flavourless oil, for frying
  • nut butter, maple syrup and berries or sliced banana to serve

 

Now put it together!

-Mix or blend banana, oats, chia seeds, milk, cinnamon, salt and protein powder

-Coat the pan with a thin layer of oil and wait for it to heat about a minute 

-Place a couple of spoonfuls of mixture into the pan and lightly pat it with a fork to create a flat pancake around 1-2cm thick

-Watch for a brown-lining around the edges of the bottom of the pancake, once there flip over 

-Once the second layer is brown, flip onto a plate 

-Place chopped fruits, nuts and nut butter for extra texture, flavour and nutrients
