Recipe of the month: Dark Chocolate Easter Banana Cake

Easter is a time for celebrating spring, new life and friendships. Eating healthy also means getting that balance of eating deliciously to feed more than the heart but the soul. Our Dietician Anna, has put together a nutriciously delicious dark chocolate banana cake that contains a variety of beneficial ingredients that are insanely delicious, packed with various textures and flavours.

 

Eating together is better!  

Create this cake for Easter weekend and share the love with some friends. 

 

Ingredients 

3 ripe bananas
160 g - wholewheat/oat flour
40 g of whey protein (May be used to replace 40g of flour)
100 g crunchy peanut butter
50 g coconut sugar/xylitol/honey
2 teaspoons of cinnamon
200 ml of plant or cow milk
12 g of baking powder
20 g of dark chocolate drops/chopped chocolate

 

Instructions

  1. Put aside a piece of banana for the decoration. Mix the rest of bananas with peanut butter and milk 
  2. In another bowl, mix the dry ingredients - flour, protein powder, cinnamon, baking powder and sugar
  3. Now mix together the two batches, the dry and moist batch gradually. Once one dough, mix the dark chocolate drops in
  4. Pour the dough into a bread pan, lined with baking paper. Decorate the top with thin slices of banana and dark chocolate chocolate drops.
  5. Bake at 180 C, about 30-35 min, after 30 minutes put skewer in, when it’s dry your banana bread is ready. 
  6. Baked bread should be completely cooled and then served either on its own or smeared with peanut butter or jam. 

 

The Macros 

One banana bread has 12 servings. One serving has around 156 kcal, 19 g carbs, 5 g fat, 6 g protein, 3 g fiber, 7 g sugar.
